Just an update: You can get the kind of 12/8 beat I was looking for. I just needed to play with the brain a bit more. Thanks Ralph and Stratman!

It's really too simple. Just take the bass drum busy knob and the snare drum busy knob and drag them down to their lowest levels. Stratman's advice on calculating tempo is right on. It's dead easy. My only mistake was not realizing that I had to fiddle with the brain.
