Something along the lines of the drums on some mid 70s Joni Mitchell, such as this one (groove starts around 49 seconds)

It's this very light, focused kind of playing, with what sounds like 16th ride / hat patterns, with tasteful open hats sprinkled throughout. Sometimes just straight 8ths on the hats.

I've tried using Charlie with Jamstix classic (using the grid for 16th hats, kicks and snares) but the hats in particular sound kind of herky jerky. I'm looking for that smooth, non-dynamic sound, with extremely simple but tasteful fills. Any tips on choice of drummer / style?

The drummer is using brushes. Do you have the XL Pak?
